The barbecue is cooked low and slow with indirect heat over oak smoke in a Southern US style, in a Finnish-built wooden smokehouse designed for Finnish conditions. The meat comes from selected suppliers, with EU origin stated unless noted otherwise; the Black Angus beef brisket, for example, comes from Australia.
The brand is run by Jaana and Jarno Sirrola, who started as franchisees in 2018 and bought the business at the end of 2020. Mobile equipment serves street food at festivals, fairs and markets across Finland, and private events can be booked. The website is shared with sister outlets Papa's 54 in Oitti, Sir'Smoke BBQ in Lammi and the summer cafe TalliCafe in Tervakoski. The premises are wheelchair accessible.
